Ever wonder what those little circle icons all over the store mean? And what’s up with all those color-coded retro computer printout tags on the front of the shelving? Below is a guide to help you understand the GBCFC signage indicators:
Formerly known as DROPP-approved, GBCFC Approved applies to local farms or products that are grown or produced without the use of synthetic fertilizers*, chemical herbicides*, toxic pesticides*, genetically modified seed, or other toxic substances. We call a farm GBCFC Approved when the producer exhibits practices that foster a living soil and nutritionally dense sustenance. All GBCFC Approved entities are either certified organic or are initially inspected by the GBCFC. *The National Organic Program’s List of Allowable and Prohibited Substances is our baseline when considering these substances: http://www.ams. usda.gov/rules-regulations/organic/national-list
We define locally produced goods as those sourced from within our foodshed. We define our foodshed as the watershed (or drainage basin) of our three closest rivers: the Truckee, Carson, and Walker Rivers. Our watershed is the geographical lifeblood of our community, connecting our actions and practices with our neighbors.
Organic is a labeling term that indicates that a food or other agricultural product has been produced through approved methods that integrate cultural, biological, and mechanical practices that foster cycling of resources, promote ecological balance, and conserve biodiversity. Synthetic fertilizers, sewage sludge, irradiation, and genetic engineering may not be used.
Veganism is a diet and lifestyle that is entirely plant based and excludes all animal derived ingredients and products, including flesh, fish, fowl, dairy products (animal milk, butter, cheese, yogurt, etc.), eggs, honey, and animal gelatin.
Paleo Friendly at GBCFC is based on the Paleo Diet, a way of eating built around foods presumed to have been eaten by early humans. A Paleo Friendly diet consists primarily of meat, fish, vegetables, fruit, and honey while excluding dairy (except pastured butter and ghee), grains, and processed food.
Gluten-free Friendly products do not contain gluten or any ingredient with gluten. They are NOT verified gluten-free and can be made on shared equipment. Our kitchen sanitizes all surfaces and equipment before crafting gluten-free products.
