Did you know seaweed has the highest density of vitamins and minerals of any vegetable on the planet? It has tons of Iodine, which is one of those micronutrients we don’t often get enough of in our daily land-roving diets. Iodine is known to give your brain and thyroid health a boost. Seaweed also has lots of Vitamins B-12 and A, as well as calcium [more than broccoli, would you believe?] and as much protein as many legumes. It also is a good source of soluble fiber, which blocks absorption of sugar and cholesterol as it slows down your digestive process. What makes seaweed even more of a secret weapon is how versatile it is in foods – beyond its traditional use in sushi, seaweed is also great in salads, sandwiches, soups, stir-fries, casseroles, mixed in to juices and smoothies, or just about any hot dish.
